Genoise as a Bunt Cake

Prepare the bunt pan — coconut oil is a great way to grease an elaborately crevassed bunt pan. Anything but butter is the best prep for an easy release. After every fold and surface is greased, dust with fine almond powder. This has been our experience for a good release.
A little butter was added to my genoise recipe. It was melted and folded in before the flour and separated egg whites. The cake is dry but light, and so is great served with a thinner chocolate sauce, yogurt (or ice cream), and chopped nuts.
