Nasturtiums are edible peppery tasting flowers so they are perfect on a breakfast of green chili and fried eggs.
Recipe for Green Chili:
- 1 T Olive Oil
- Onion, 1/4 of 1, chopped & 1 garlic clove, minced
- New Mexico green chilies seeded, peeled and chopped roughly
- 1 t cumin
- 1 t dried red chili powder or smoked paprika
- 1 t salt
- 1 T flour
- 2 cups vegetable stock
Sauté onion in olive oil until limp, add garlic, spices and toss for 1 minute. Add flour, stir for a minute then reduce heat and add the stock. This is a fresh, chuncky green chili that works well on a fried egg and moistens accompanying hash browns or ranch potatoes.
*New note on Frying eggs – in a green pan has become one of the better ways to make eggs. We received the pan as a gift for Christmas from Graham and Chloë in 2019. These eggs are fine, but require much more oil in our old sauté pan than in the green pan, which is non-stick without any of the chemicals.
