A Poulet from Tijeras
Rub the skin with olive oil, salt and rosemary in a roasting pan. Pre-heat oven to 425 degrees F. Stuff with one lemon cut in half. The chicken should come to room temperature. Roast this chicken until it is 165 degrees measured in the breast. Carve like a turkey.
The secret to this fabulous meal was the quality of the chicken. The breed came from France is was raised in Tijeras, NM. The grower told me it would be available on the first Saturday in December, and maybe the second as well. Luckily, a friend went and secured the frozen chicken from the Santa Fe Farmer’s Market, that second Saturday (neither could I attend) and we all had a great Christmas week, chicken dinner.
