Yesterday, I roasted raw almonds at 350 °F because it is the default on our oven. We were going out to meet people, so I chose roasting higher than the 300°F
I usually use. After 15 minutes, they were tasted and determined not done. I planned to turn them off after another 15minutes and let them cool in the oven while we were gone. Luckily I smelled them after 10, and removed them from the oven. There weren’t ruined but …

The almonds were a little too done. I decided to make them into spiced nuts. I heated butter (a tablespoon) added honey and toasted, unsweetened coconut. Then added the almonds and stirred. After the nuts were coated, all was turned out into a bowl and chopped fresh chocolate mint was tossed on and stirred in.
Delicious Hiking Nuts is the new name for these spiced nuts because anything tastes great when you’re hot and tired and miles from home. Delicious water. Yes, it is and went very well with this.
Also these were great with a gin and tonic.
