
Grate zucchini or other squash. Julienne some rainbow chard both stems and leaves. Use a clean kitchen towel to press as much flour as possible from the vegetables.
Add eggs (as needed to cover the vegetables) that have been mixed with 1T per egg of flour.
Cheese (grated) could be a nice addition, or added to the top as the fritter is frying.
Heat oil (avocado or olive in a pinch) in a small frypan and use a ladle to pour a scant cup of batter into the hot oil. Cook until firm and flip. Cook second side.


Cook the main while these are frying because they are best served right off the griddle. About 5 minutes per side.
Our menu this evening, included smash burgers with green chili cheese centers. And a small sorrel salad (chiffonade) with pear and toasted walnuts.

- Smell: red fruit,
- Taste: pinot noir, red berries, forest floor
- Think: Monthélie in the renowned Côte de Beaune in Burgundy.
