Whisk or use a blender to beat the eggs, add milk, butter, mix. Then add flour and flavorings, and mix well. Consistency should be of slightly heavy cream, not cake batter.
Heat a flat-bottomed pan or grill and oil lightly. Thoroughly heated on our setting 5. Pour in 1.5 oz of batter and bump up temp to #6. In one minute the crepe should be bubbled and ready to flip. Flip and heat for another minute at most.
Turn over pan onto waiting dish.
Let your crowd add filling and toppings as they wish.
