Chill a coupe glass. (Make the syrup). Add all ingredients except the sparkling rose into a shaker without ice. Shake until it’s nice and frothy.
Add ice and shake again
Strain into your chilled couple
Add sparkling rose, to fill the coupe glass
Garnish with an orange twist and rub it on the rim and then curl it up and skewer it with a cherry to rest on the side of the glass.

- 1 oz vodka
- 1 oz fino sherry
- 1 oz cherry saffron syrup (see below)
- 1/2 of a lemon, juiced
- Sparkling Rose
- Egg white (for foam, optional)

Cherry Saffron Syrup
The syrup can be made in this quantity and frozen in ice cube trays.

- 1 cinnamon stick
- 2 quarts Tart Cherries (fresh & pitted or frozen)
- 4 cups white sugar
- 3 pinches of saffron (2 teaspoons)
- 3 cups water
- 3 tsp Smoked Paprika
- 2 tsp Red Chili Powder
Pull the cherries out of the freezer and add sugar the night before making so the cherries can macerate and thaw.
Once the cherries are nice and soft add everything else except the water and use a potato masher to smash the cherries and mix in the spices.
Add the water and put on low heat on the stove, slowly bringing to boil and then reduce the heat and let it simmer for 10-20 minutes.
Strain out all the cherries, the finer the strainer the clearer the syrup the will be but it will taste just fine with some spices still mixed in.
Let syrup chill and keep refrigerated, or freeze for later use.
