For the last day of my women’s group classes, I brought these delicious bars – a dessert than can be eaten with a ski glove on – and along with a Mexican coffee on the deck at Totemoff’s.
The ingredients :
- 2 cups cookie crumbs (TJ Alphabet Cinnamon Cookies)
- 12 T melted butter
- 1 1/3 cup coconut shredded
- 3 cups pecan halves
- 18 oz of chopped various chocolate bars like Lindt (Milk, Dark, White)
- 15 oz sweetened condensed milk
Mix crumbs and butter, and press into a 9×13 pan. Preheat oven to 375F. Strew coconut onto the crumbs. Chop all but 1 cup of pecans and put the pieces over the coconut. Scatter chocolate over them and then pour milk on top. Put pecan halves on top, imagining each one to be centered on a single bar after it is cut. Bake for 10 minutes then press down the top nuts. Cook 20 min more. Let cool for a day, and then cut along your imaginary lines.
